I think if he was born in seiretei, amongst significantly stronger souls he have noticed by the seiretei or learned to cope with his excessive power differently.
As a villian, Aizen did his job: he strategized, he used his abilities and power, he fucked shit up. It worked. Aizen, as a character, though, probably seems annoying, egotistic, and like a pseudo-omniscient being that should've died when Ichigo bisected him with Mugetsu. I guess that's part of his charm.
Aizen demonstrated that he’s fast enough that at any distance he could touch Ichigo. At some point Hinamori either got moved by Aizen or was manipulated to stand in a certain spot during the battle. I don’t really know what you expected Ichigo to do. His only real opening was when Yamamoto grabbed Aizen.
So basically, Aizen wouldn't normally draw his sword. Even if he would, he would instantly kill Gin if he uses Bankai so Gin waited for the opportunity to be able to use Bankai without being suspicioned. I know he can make his sword look the same in Bankai but Aizen would realize the change in Reiatsu.
